Improve help in menu

Description

The menu assumes the user is familiar with git. Explain what "trunk" is, and give an example of setting a stable version. See ​https://lists.linuxfromscratch.org/sympa/arc/alfs-discuss/2023-08/msg00009.html for details

Things like "Use book" (It's rather Book flavor), "working copy" (it's now a local copy when using git), etc should be improved. But it is not always easy to improve help staying within reasonable amount of text...
